MIXED CORDOVIL OLIVE OF NATURAL CURE

The cordovil olive exists in abundance, alongside with the galega in every municipalities of the Nordeste Alentejano, mainly in Marvão, Castelo de Vide and Portalegre, where we acquire it.

This olive, or rather its name, is in the process of recognition as Denominação de Origem Protegida (Denomination of Protected Origin), having the Caderno de Especificação e Regras de Produção do Produto Azeitona de Mesa do Norte Alentejano (a notebook where are specified the production rules of the product Olive from Nordeste Alentejano), been delivered by APAFNA, SA (Group of Agricultural and Forest Producers from Nordeste Alentejano) in the IDRHA (Rural Development and Hydraulic Institut), for the respective analysis.

The cordovil olive is characterized by its medium or large size (caliber from 180 to 240 fruits per kg), by its excellent profit in oil and as being equally appropriated to use in conserve.

It is harvested during the months of September and early October, when the fruit has not reached yet its full maturity, presenting greenish or pinkish coloured parts, coming from here the legal name of "mixed olives", in other words, between the green and black.

Upon receipt at the factory, the olive is placed in water and remains so for some time in order to lose the "bitterness". Then go on its selection, to ensure that only healthy fruit and with adequate size will be used to mark Maruán Conserves.

Finally takes place the natural fermentation process and subsequent conservation, made only with the addition of brine and permanent recycling (analysis, stir the brine and put new).

The same is placed on the market in 3 ways - whole, shredded or crushed, being in the last 2 cases added a number of natural products for add them traditional aromas and flavours used by our ancestors since ever. They are the oregano, garlic and pepper.

The cordovil variety is, in any of the ways it is presented, one of the most appetizing varieties existents in Portugal.
