Green Olives stuffed with almond kernels
The green olives, cured in brine, are obtained from fruits harvested when they reached the final size, featuring the colour green to straw-yellow, characteristic of the immature fruit. After harvesting the fruits are subjected to a treatment with alkaline solution and are placed in brine in which it produces a total natural lactic fermentation in brine.
After the olives are pitted and stuffed with almond kernels.
